10 TIPS FOR SUCCESSFUL BARBECUES

1.Disposable barbecues available in supermarket.

2.Do not use petrol to light a barbecue - buy lighting bricks or lighting fluid.

3.Make sure the grill is well oiled to prevent sticking.

4..Wood takes longer to burn than charcoal so if you are using wood, start well before you want to eat.

5.Aromatic woods (bay and fruit woods) give a delicious aroma and flavour. Dried herbs can be added near the end of the cooking time to add perfume. Dried fennel stalks make a good bed on which to grill fish. Baste with rosemary or thyme dipped in oil.

6.Start to cook only when the smoke has gone and a powdery grey ash covers the glowing coals or wood.

7.Keep water close by for calming flames if necessary, or they will scorch the food before it can cook.

8.Do not barbecue under trees.

9.If barbecuing on a beach, make sure the flame is completely out before leaving. (Some beaches do not allow barbecues - check before you start.)

10.To clean the barbecue,soak the grill in a solution of washing-up liquid and warm water.
